5 Ingredient Light Reuben Sandwich: Made w/ Cauliflower Pancakes and Turkey

Who doesn’t LOOVE a Reuben!! But doesn’t LOOVE the carbs…How ’bout making it with Cauliflower Pancakes? & really you can make any sandwich with these…the options are endless & you’re substituting bread for Cauliflower a veggie which is low & fat AND high in fiber, Vitamin C, Iron, Vitamin B6 and magnesium. WIN/WIN

Did a mention that sauerkraut (or try Kimchi it’s nutritious too!) is also healthy! This is an all around healthy very satisfying meal! Sauerkraut contains essential fiber, vitamins and minerals in addition to probiotic bacteria!

Now, let’s talk Cauliflower Pancakes…delicious and healthy! I am really disappointed that Trader Joe’s no longer sells them and apparently I’m the not only one…Google seems to know this search well! Recipe

Ingredients

  • 1 box Frozen Cauliflower Pancakes (2 different kinds referenced above)
  • Jalapeno Sauce or Green Dragon Sauce (spicy mayo or regular mayo–I’m experimented w/ several different sauces)
  • 1 cup Shredded Mozzarella Cheese
  • 1/2 cup Pickled Sauerkraut (OR try Kimchi which is Great!)
  • 6 oz package of peppered turkey breast–cut into chucks
  • 1 Jalapeno seeded & sliced (optional)

Step 1: Defrost Cauliflower Pancakes

Step 2: Spray a large frying pan w/ olive oil spray and put on medium-high. Once heated add the Cauliflower Pancakes and brown lightly on each side. 3-6 minutes each side. OR you can pop them in a toaster oven. The idea is to get them toasty. Get a nice golden bread crisp…trust me, you won’t be disappointed.

Step 3: Place the peppered turkey breast on top of the browned cauliflower, evenly distribute the sauerkraut or kimchi on top, add sauce & then top w/ shredded cheese. Add fresh jalapeno if desired.

Step 4: Cover the pan until all the cheese is melted & the sandwiches are heated through!

Bon Appetit!! Try w/ ham & cheese or turkey & swiss!! The options are endless…I have also done grilled chicken w/ a tangy slaw…
